Hi Stephen,
 
You can configure the NIC you want to use for the internet with a default gateway.
The second NIC shouldn't have a gateway specified.
You can then specify static routes to the other 'stuff' you need in order to work.
 
The command is "route add" from command prompt.
Remember to make the routes persistent otherwise they will be cleared everytime you reboot.
This should sort you out although i have no idea if it works on VISTA.
