I am sure they can trace the spamming IP address to the SIM Card and get you....they can block it. Even if you are using a prepaid SIM card.....if I was their sysadmin, I can play this game with you till you are broke:-)
It's pretty easy to control any spamming server though...several tricks at throttling your connection and even "suffocating" your server to an extent it runs out of resources - yes, the spamming server - you pump into the SMTP engine mail that does not go out, thereby DDoS-ing your own server. Get it?

But fundamentally, you are right.
