I have a 64 bit in production and its running very smooth. if i really really need the GUI, i installed desktop via yum and i would just type startx
One particular thing am happy about version 6 is the SeLinux which looks much better than version 5. anyway am just a beginner in this sysadmin field.

Hey skunks
Who is using CentOS 6.* , been finding it a bit odd from previous versions mostly in the installations and not yet mastered a perfect installation.
Two points to note are it defaults to runlevel 3 if you chose a server installatation (was stuck as to why I'm not getting a GUI) Secondly I installed a 32 bit on 4GB ram, now it only recognizes 3.36GB. kernel-pae is no longer a module on this version so how do I enable it to recognize 4GB
