I think @wash is correct in saying that it all depends on the nature of the organisation, the budget and what one would like to achieve from the mail server. I have done Exchange, MDaemon and even postfix installation on CentOS Linux.
Fact remains, exchange will remain superior in terms of messaging and calendar if the users will be using it. Mdaemon is good but does not have as many addons that exchange has to offer, I would call it almost basic mail server. On the other hand, postfix is the best in terms of cost effectiveness and if setup properly with other applications like Mailwatch and iptables it can give you the most stable mail server which can run for years without any glitches.
I have one Mail Server which I installed in 2006 as CentOS 4.3 and at the moment its on CentOS 6.5 without any issues.
Therefore it all depends on the organisation setup, budget,users, e.t.c .
