I think you only need to worry about Office since for your win 7 and 8.1 once you upgrade to Win 10 you are safe coz its free.

On office especially 365 all you need is to clearly plan on what your needs are after which you buy the solution that exactly fits those needs. I have seen guys rush to office 365 with unplanned implementation and they end up being very frustrated. For example moving to office 365 and yet all your client comps run office 2010 hence your users dont really get the great featured of office 365. Ms has guys certified on Volume License and they can advise.

On Volume license there was something called Software Assurance which allowed one to upgrade for free to future newer versions of the software you purchase under volume license just by adding a few dollars but am not sure how it plays out now with 365. Probably you will need to research more.

Pricing for any of the licenses is based on
1. Type of license I.e Home,  Standard,  Professional and Enterprise each packaged with different options /features and or capabilities.

2. Organisation type I.e Commercial /Private,  Government,  Education,  Non Govt
