I feel your frustration, I have the same issue with my X10 mini Pro, running 2.1-update1. 2.3 is not officially available for the mini. I used PC companion to update my X10i to Gingerbread though. Seems SE won't be releasing any updates for the mini. One of these days I hope I'll have the time to try a custom ROM - and some money to set aside for a new phone in case I brick it!
