Cynthia, a few questions if you don't mind:

- what do you plan to use the servers for? (mail/web/files/media/general-purpose etc)
- who will be administering them?
- what is their expertise level?
- are they expected to be full-time system administrators?
- which do you have more of: money (to pay someone to do it) or time (to get your hands dirty on occasion if need be?)

Your answers will help narrow down your choices.

If you can for a moment not say "Linux", then PC-BSD can give you a very nice Desktop as well as a proven server under the hood (FreeBSD).

@Wash, FreeBSD documentation is a good place to learn. I quote " Welcome to FreeBSD! This handbook covers the installation and day to day use of FreeBSD 6.4-RELEASE and FreeBSD 7.2-RELEASE". http://www.freebsd.org/doc/en/books/handbook/
