@George, consider that you will not be config-teeing each day. Nor setting up cisco gear all the time. What happens when you have to do a inhouse fiber backbone? Or calculate Add/Drops? For networking, it is essential to build on the core. Some thoughts for you = How would you extend an ethernet cable over the 100metres? Ok you'd want to add more switches, what about bpdu considerations? You may also do a repeater, what happens to the frames and chances of collisions/delays in a busy network? How would you design a network based on traffic coming from various reosurces such as Servers, Printers and Shares? Suppose your next network upgrade is to voip, how will this traffic be affected by bursy internal resources? How can you connect multiple routers to create correct routings at various levels.
