Screenshots of sms chat cannot be admissible as evidence, at least not in a court of competent jurisdiction because its impossible to prove authenticity. Your best bet is to take an exact image of the whole phone, and simulate using any emulator. The image should be in read only format.
But if it's not a court, well you csn argue your way. But if I was the antagonist, I would just say yoy used photoshop
