Hi Erick, This is very possible, I have done this before and successfully created a customized Live DC distro using both an Ubuntu and also using Fedora. Since you are using CentOS I would recommend you check out the fedora custom spins website http://spins.fedoraproject.org which was of much help to me when I was doing this.
